Octave casks are teeny (one eighth of the size of a standard cask) holding just 50 litres of whisky for maximum oak influence on the spirit. This is a fact Duncan Taylor uses to its advantage for its long-running bottling series The Octave.The latest instalment is The Huntly, a blended malt comprised from liquid distilled in 1997 and bottled in 2017. During that time, the whisky spent five months in an octave cask, soaking up that lovely toasty vanilla influence. Only 98 bottles were released enjoy.
