This particular expression is made using the Cuishe agave varietal which grows wild and tends to take around 12-15 years to reach maturity. Traditional production methods such as crushing the agave with a horse-drawn stone mill, and cooking it for days in a stone pit underground are reflected in the quality of this wonderful sipper.
