After a long fermentation with wild yeasts, the molasses-based rum is produced in copper pot stills, resulting in a hugely complex, aromatic character. The aim was to create a clear rum that remained true to Hampden Estate's renowned funky, high-ester style, and we can see this working well in an array of classic serves, or neat with a squeeze of fresh lime.
