50cl / 41.00% - This cask-aged gin from the wonderful lot at Greensand Ridge was created first by distilling its multi-award winning London Dry Gin with an altered recipe in order to moderate woody elements and add more citrusy brightness. The distillate was then matured for ten months in a 250 litre Pedro-Ximenez sherry butt. Should make a superb base for short cocktails such as the Negroni or Old Fashioned.
