Ferdinand Mayr is a leading authority on Austrian wine who, after spending much of his career teaching about wine, has fulfilled his lifelong dream of making his own wine. Committed to quality and sustainability, he uses compost-management in the vineyard. It improves the uptake of nutrients in the vines and drought resistance, and boosts microbial life. The wine is fermented mainly in stainless steel and larger oak barrels, to stay true to the aromatic characteristics of the wine, and then left on the lees for a short amount of time to gain complexity. Expect concentrated apple and pear aromas, with a touch of pepper, which is typical of this style of wine; it has well-integrated acidity and a fresh finish. Enjoy with a traditional Wiener Schnitzel.
