Billecart-Salmon 'Le Réserve' Extra Brut NV Champagne
Founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, Billecart-Salmon is one of the few remaining family-owned Champagne houses, now in its seventh generation. Located in Mareuil-sur-Aÿ, in the heart of the region, the house has been dedicated to producing elegant and refined Champagnes for over two centuries. Le Réserve is their signature blend of 15 vintages, combining 43% Pinot Meunier, 29% Chardonnay, and 28% Pinot Noir and 30% Chardonnay. The base wine was vinified in stainless steel tanks before undergoing secondary fermentation n bottle and lees ageing for 50 months. Extra Brut in style, the final blend comprises over 50% of reserve wines. Expect aromas of white stone fruit, subtle biscuit, and floral notes with apple, crisp pear and citrus on the palate. It pairs beautifully with seafood, such as oysters or smoked salmon, where the wine’s freshness and delicate bubbles complement the richness of the dish.
