Akashi-Tai sakes are produced by the Akashi Sake Brewery, a family-run brewery founded by the Yonezawa family in 1856. The brewery is based in the small port city of Akashi, a coastal town in southwest Japan near Kobe and Osaka in the Hyogo prefecture. Akashi is rich in tradition, famed for its bustling fish market, which date backs around 400 years and continues to be a cultural hub today. Fresh seafood, particularly the locally prized Akashi sea bream, has shaped the city’s culinary identity and pairs beautifully with the delicate flavours of sake. The Akashi-Tai brand name pays tribute to the iconic Sea Bream (tai), a symbol of strength and resilience of character in Japan. It also reflects the powerful currents of the Akashi Strait, where the fish thrives against the tide. They maintain artisanal methods, using only the finest local ingredients such as Yamadanishiki rice from Hyogo and pure spring water from Akashi. Shiraume Umeshu is a sweet and rich plum liqueur with notes of dried fruits, dates, and almonds. It has a refreshing, dry finish with almond and marzipan aromas.
