Champagne Jacquart 'Mosaique' Brut NV
Champagne Jacquart’s vineyards are spread across 60 crus in Champagne. Their deep-rooted knowledge of each of these sites means they can create over 300 wines that build the final blend of this Champagne, each of which contributes aromatic nuances and textures. Chardonnay is the main grape of the blend contributing freshness, energy and finesse, alongside Pinot Noir which provides a light structure, and Meunier which provides fruity notes. No oak is used in the winemaking, in order to maintain the freshness and fruit-forward aromas. The wine matures on the lees in the bottle for three years or more, much longer than the minimum requirement of 12 months, giving it refined bubbles and a creamy texture. This Champagne shines with a mouth-watering, saline texture and luxurious mousse, boasting aromas of grapefruit, white flowers, and fresh apple. It pairs perfectly with a sea bream ceviche, a Dublin Bay prawn salad, or ricotta and spinach cannelloni.
