Meet Graham Beck’s most prestigious and exclusive Cap Classique, the Cuvée Clive. This extraordinary cuvée is the ultimate expression of their dedication to creating Méthode Champenoise (Traditional Method) style wines of distinction, complexity, and world-class excellence. A blend of Chardonnay and Pinot Noir, half of the Chardonnay blend was aged in French and Austrian oak to create extra texture, and the rest was aged in stainless steel tanks during the primary fermentation to preserve the fresh fruit flavours. These were blended after four months, then bottled and aged on the lees for five years. In the glass, this Cap Classique looks youthful and exuberant, with a brilliant, almost luminescent yellow hue and a slight tinge of green on the meniscus in the glass. Enjoy aromas of white peach, fresh pears, granny smith apples, and lemon zest, with undertones of roasted nuts, brioche, and hints of spice developing as the wine opens up in the glass. The palate is crisp and vibrant, with distinct flavours of grapefruit, lemon, peach, and apple, and the fresh acidity leads to a mouth-watering, juicy finish that lingers long after each sip.
