You don't find many white wines crafted by the appassimento method, making this somewhat of a hidden gem. Grapes are partially dried before fermentation to concentrate the sugars and flavours, resulting in a rich, smooth, and slightly off-dry wine. Expect flavours of apricot, grapefruit, flowers, and honey. Try it with curries and Moroccan spiced dishes.
