This is a unique style of wine which can only be made from the best vintages and is aged on the lees for as long as 62 months. Extra complexity is achieved through fermenting a portion of the base wine in old oak barrels to give the wine a creamy texture on the palate. This Chardonnay-dominant sparkler is a true testament to the quality of the fruit. It has a lively bouquet of lemon zest and brioche notes with fresh acidity and a refined mousse, and a long and creamy finish. A perfect pairing for seafood, like oysters.
