They preserve their legacy by grafting 'children' from their most exquisite trees – rare varieties that may have vanished from the commercial world, but still produce the finest cyders. Using Champagne yeast to protect the fruit’s delicate profile, they create a cyder where the true character of the apple is never lost. It is crisp, medium-dry with a fresh, direct aroma of pressed apples. It features a delicate, fruity taste with a clean, sparkling and slightly sharp finish. Its high acidity cuts through fat, making it great with rich, savoury, or spicy foods, creamy cheeses, like Brie or Camembert, or mild curries.
