Domaine Tour Trencavel 'La Liviniere' Organic, Minervois La Livinière AOC, 2021
Located at the heart of Minervois, between La Livinière, Félines-Minervois, and Trausse-Minervois, small villages in the Languedoc region. The winery is based on south facing terraces with old vines set within the backdrop of the mountains framing the vineyard. Domaine Tour Trencavel adopts a sustainable approach with maintenance of parcels done by hand from short pruning, de-budding, harvest, and leaf thinning. It is named after the Roger Trencavel, famous in the history of the crusades dating back to the 1200s. The wine is made up of a blend of Syrah, Grenache, Mourvèdre, and Carignan. Expect aromas of garrigue, black olive tapenade, and ripe fruits. The structure is generous and concentrated and the supple tannins are well integrated. Try it with grilled meat and strong cheeses.
